Instant Pot Brazilian Pork Roast

This I make when I'm having a party or something- it's a high yield recipe that's super easy to double for guests. It also freezes really well and is very versatile. It makes good burrito bowls, taco salads, filling for enchiladas, filling for tamales (if you're feeling super ambitious), or topping for a huge sheet pan of party nachos. This recipe would work just fine with chicken, too.
2 tbsp oil
2 lbs pork shoulder (again, I've used pork butt and it all seems to work fine), cut into large chunks
Salt and pepper to taste
1 tbsp dry oregano
A big handful of Guajillo chilis (I've only seen them come in the medium size bulk containers which seems like a fine amount), soaked in hot water for a few hours
2 cloves garlic, peeled
1 jalapeno pepper, seeded
1c orange juice
1c passionfruit juice (Welch's works great- if you don't drink the rest of the container, it freezes really well for the next time you wanna make them! You can also sub this for 3/4 c of orange juice if you prefer)
Heat your oil on the saute setting of the IP. Season your pork with salt, pepper, and oregano. Brown the meat in the hot oil.
Drain the chilis. In a blender or food processor, blend the garlic, soft guajillo peppers, jalapeno, and juice until smooth. Pour over the pork.
Cook on Manual, High pressure for 60 mins. Let naturally release for 10 mins. Remove the pork and shred. Add it back to the sauce!
Make the following fabulous meals:
-Tex-Mex bowls with pork, rice, beans, corn, fresh salsa, fresh guacamole, fajita vegetables, and fresh cilantro
-Brazilian bowls with pork, rice, corn, avocado, black beans, mango, and fried plantains or plantain chips
-Sheet pan nachos topped with pork, shredded cheese, fresh tomatoes, scallions, beans, jalapenos, avocado, and anything else you like on nachos!
-Tacos with mango salsa
-Tamales filled with pork
-Tamale bowls with plain corn porridge topped with fajita vegetables, pork, beans, guacamole, and salsa
-Enchiladas filled with pork mixed with cream cheese, topped with enchilada sauce and shredded cheese
-Burritos filled with pork, rice, beans, and guacamole
